Breakfast Burrito Wrap

 I got this idea from a friend.  It’s easy, and makes the mornings so much faster. 

You have to be good at the prep work, but trust me it’s worth it..

What you’ll need:

  • 6 eggs 
  • 4 small tortilla wraps
  • cheddar cheese 
  • 1 can of black beans 
  • 1 small jar of salsa 
  • salt and pepper 
  • wax paper 

 

Step 1: Scramble some eggs.

Step 2: Divide eggs into 4, and place on wraps

Step 3: Add salsa as desired

Step 4: 1 TBS of rinsed, drained black beans

Step 5: Add cheese as desired

Step 6: Wrap contents in Tortilla, and then wrap in wax paper, and twist the ends

Step 7: Freeze

In the Morning:

If you can remember to pop a wrap out of the freezer, and defrost in the fridge overnight,  all you have to do is pop in the microwave for 30 seconds to a 1 minute.

If you are unable or forget to defrost overnight, you can defrost in the microwave, and pop it in the oven on low broil to crisp up the tortilla.

Always remember you can customized this breakfast wrap to include almost anything! Next time I’m going to try it with crumbled sausage.
